We are a family business based in Killeen, Texas, by way of Guam. Being a military family, we have traveled all over the world. This allowed us to observe cultures and acquire recipes from everywhere. These experiences inspire both our flavors and our concept.
The Little Grass Shack is a tiny food trailer that serves up, what we'd like to call, Island Fusion. This is a collaboration of flavors from Coastal Asia, The Western Pacific, Polynesia, the US mainland, and the Caribbean. To come up with a name, we turned to our experiences in these regions. One common element was a little grass shack, oftentimes hosting a family barbeque or get-together. The mouth-watering smells coming off the hot coals excited your tastebuds. We invite you to share in these memories while enjoying a flavor profile as unique as the places that influenced the flavors before you.
We specialize in island fusion. The menu includes dishes from the Philippines, Kapampangan (their culinary capital); Guam, Hawaii, and the mainland (US). Whether it's brisket and burnt ends,; lumpia, a type of egg roll; ribs, red rice, jerk chicken, or street tacos we've got you. Also, we have the best pork bbq sticks between here and Manila. All this and more can be catered to your home for a small family dinner, office work party, or event.

Staff is nice. Their lumpia is perfect, and one of the best I've had in Central Texas! I ordered the ribs plate, shrimp patties, lumpia, and jerk chicken plate. Everything was really good! Food is made from scratch, even their sauces.
They have a rotating menu so if you're looking for something specific, call ahead. Anyway, it keeps things interesting! I'll be visiting again.

What a menu!
The menu is partially Filipino. I am 100% Filipino so I for the first visit I opted for quintessential Filipino Choices!
I opted for the Pancit Palabok and the Taho. The pancit was super authentic. Flavors were on point. The thicker rice noodles were also a pro-choice. Portions are perfect. They did not scrimp on the sauce nor the toppings. What would have made this an A+ bowl of pancit is instead of lemon wedges, clamansi and fish sauce would have pushed this bowl to another level. It's probably too much of an ask since calamansi are not readily available in Texas, lol.
My second item was the taho. A tofu dessert served served in a glass/cup in a vanilla brown sugar syrup along with tapioca balls. FYI this dessert is served warm.
I look forward to my next visit. If I can resist my craving for Filipino food, I may go for more of the massive menu
